The embers/firewood are placed in the side boxes (removable).

MODE OF USE

 

 

 

PREPARATION

 

Before starting the ignition, place the liquid container tray at the bottom of the cylinder WITH WATER.

 

This tray has a double function:

 

Absorb fat from cuts.

 

Achieve moisture and aromatization in cooking, by adding different aromatic herbs.

ON

 

To begin lighting, you can place a fire starter at the base of each box and surround it with charcoal and small pieces of firewood, to make it faster.

Once the fire has started, place the lids on the side boxes so that the flame does not burn the side of the oven. During this lighting process, you can leave the main lid of the oven open to help oxygenate. The oven will begin to raise temperature slowly.

Once the fire is started, you can start using the oven.

 

COOKING

 

During cooking it is advisable to add some coals to the side boxes, as necessary, to maintain the oven temperature. You can also add pieces of firewood (very dry) both for smoking and for making a flame. 

 

During cooking, the chimney butterfly must be open. Only close it if the oven temperature is excessive. 

 

To smoke, place the type of wood or chips of your choice over the coals and close the lids. For this function, the chimney butterfly should be open only ¼. 

 

To ensure that the meats are more browned on the outside, towards the end of cooking, increase the amount of charcoal or firewood to raise the temperature of the oven.

ADDITIONAL DATA

 

The Piro oven has a double function:

 

Hot Smoking Function.

 

In this function, the oven temperature must be between 70°C and 110°C. Smoked products in this function usually last for a long time, between 4 to 8 hours (or more). The firewood to use depends on personal tastes or depending on the cut to be smoked.

 

Conventional Coal/Wood Oven Function

 

In this function, the temperature can range between 120°C and 200°C, or more, depending on various factors such as the quality of the firewood, charcoal or the climate.

In both functions, to maintain the relatively constant temperature, it will depend on the continuous feeding of charcoal/wood into the side boxes (not letting the fire burn out), as well as the regulation of oxygen inlet by opening the chimney butterfly.

CLEANING AND MAINTENANCE

 

Lateral Fire Boxes: Cleaning these boxes is very simple, since they are removable, which allows them to be easily emptied and left ready for their next use. To prevent oxidation and increase their durability, after each use, it is suggested to “paint” them with vegetable oil (with a brush or paper napkins).

Oven Interior: You can use a traditional oven degreaser (on trigger). Let it sit for a few minutes and then rinse with plenty of hot water. The bottom of the cylinder is provided with a hole that allows this cleaning to drain.

Oven Exterior: Simply clean with a damp cloth.

 

 

 

Recommended firewood

 

The most recommended and easy to obtain firewood are:

Espinillo: Invasive perfume. Good flame

Quebracho Colorado: Lots of caloric power. Good embers

Quebracho Blanco: Excellent flame level. Subtle smoky flavor.
